Bieler Pere & Fils Sabine Rose Wine is a classic Provence Rose wine with a delicate balance of flavors. Summery flowers, white tea and Provence herbs balance enticing aromatics of peach, white cherry and wild raspberry. This blush wine finds a delicate balance of floral, herbal, wild red fruit and stone fruit flavors and has a creamy, yet lifted palate interwoven with rose petals and wet stones. The wine is in no way heavy on the palate, but rather the palate has tremendous length. The goal wasn't a Rose wine with singular big flavors, the goal was a wine with more nuance, energy, soul and personality. Awards for this pink wine include 90 Points from Vinous in 2019 and 100 Top Values of 2018 from Wine Spectator; try the latest release. Pair this dry blush wine with pizza topped with prosciutto and balsamic. The grapes are grown in the hills surrounding Aix-en-Provence in order to focus on the cooler, more rugged and higher elevation in those vineyards. The result is gentler ripening and more natural acidity, two critical attributes to make the best kind of Rose. This French wine is a blend of 41% Grenache, 27% Syrah, 15% Cabernet Sauvignon, 12% Cinsault and 5% Rolle. Instead of using a single approach to each fermentation, the winemakers break up each vineyard into parts, using different yeasts, juice solids and lees treatments so each tank is a little different and brings a unique perspective in the final blend. This bottled wine has 12.9% alcohol by volume and comes in a screw cap bottle for easy opening without a corkscrew. The Bieler family has been producing Rose from Provence since the 1990’s.
