The company first started out selling meats and other products to Chicago's large population of European immigrants. But after World War II, the Windy City saw a wave of immigrants from Mexico and neighboring countries and began offering high-quality chorizo to suit them. The chorizo was so good that it earned the company its current name: La Preferida - "the preferred one."
