Cabernet Sauvignon, Napa Valley, 2008 In 2008, extensive spring frosts significantly reduced the size of Napa Valley's grape crop, greatly concentrating color, flavor and acidity in our Cabernet Sauvignon grapes. After blending (Cabernet Sauvignon [81%], Merlot [7%], Cab Franc [7%], Petit Verdot [4%] and Malbec [1%]) to optimize balance, depth and tannin structure, we aged the wine 20 months in French oak barrels, 42% new. The result is a classic Napa Valley Cabernet Sauvignon boasting fragrant blackberry, wild black cherry and loamy earth aromas; richly concentrated blackberry, plum and black cherry flavors; and a long, intense finish with sumptuous chocolate and berry tones. www.cakebred.com.
